      <image:caption>The Story of Twelve Shares “Twelve Shares”, historically a farm share community in Hampton, NH was formed by dividing shares of salt marsh and woodland into 12 families given from the King of England. Many of the land owners were grain millers with a strong sense of community. The town had strong emphasis giving ownership of part of the land to residents. Over the years, the beloved land was passed down through local families. In 1998, the land was given to the town of Hampton for recreational activities. Coincidentally, the same land is a typical gathering place for our family and friends and is in the backyard of where 12Shares came to be. “Twelve Shares” is our inspiration for sharing tradition and pioneering new and better ways to bake and eat Source: Dow, Joseph.       <image:caption>Knead and fold until the dough is tactile and slightly sticky, about 2 minutes. The more you knead, the chewier the bagel. Depending on the yogurt, a bit of extra flour may be helpful to add in during kneading. If dough is too crumbly, add a bit more yogurt until tactile. We recommend kneading the dough in a large bowl.</image:caption>

      <image:caption>Roll method: Lightly flour your surface. Roll out the ball until it is about 1” thick. Combine ends together (if there is too much flour add a drop of water). Aim to make a 2-3” hole in the center. The hole should be bigger than you think as the bagel rises in the oven! “Poke and stretch” method (easier! but less smooth bagels): It is helpful to have flour on your hands and the working surface as dough is likely sticky. Flour up your thumb and stick to the center of the dough. Once your thumb is through, squeeze dough from the inside hole to slowly stretch it out. Continue squeezing the dough as you work to form an even circle. Aim to make a 2-3” hole in the center. The hole should be bigger than you think as the bagel rises in the oven!</image:caption>
